Shake the egg, before you decide you want to buy it : if it strikes the walls of the egg yolk, making a sound like "click - clack" means that the board has developed too much, allowing air and the egg is not very fresh. Element determining the freshness of an egg is just the density of the air that develops inside the egg shell: less air inside, the egg is more fresh.
Another trick that shows when the egg is fresh is sinking it in the water: if it remains at the bottom of the water recepient it means that the egg is fresh, if it sinks but it has the top headed up, it means that the egg is one week old, while if it floats on water the egg may be too old or even rotter, so its not a good choice to try and cook it.
Eggs are used in different recipes, some more exotic, some more traditional, but have always been a staple food for most countries in the world, due to protein components. Consumption of eggs should not be but in abuse, because it can cause various diseases
